Garde Manger by Chuck Hughes

Chuck Hughes is the star of Food Network Canada’s and The Cooking Channel’s (US) Chuck’s Day Off, a show featuring the charismatic chef cooking for friends and family on his day off at his Montreal restaurant, Garde-Manger. Fabulously energetic, fun and a skilled chef, Chuck definitely has star quality and splash factor. His star is on the rise in the US, with his show airing there on the Cooking Channel, and his impressive win last spring on Iron Chef, beating none other than Bobby Flay. Chuck was also one of the competitors on the US Food Network’s Next Iron Chef: Super Chefs and last holiday season his first Christmas special aired, Chuckmas.
The cookbook features recipes from his restaurant and his show, and they are down-to-earth but festive, yet never fussy. What’s wonderful about the book is the energy the design brings—it matches Chuck’s own style and approach to cooking and to life. One can only assume this is the first of many cookbooks from Chuck Hughes.

Le Bremner: A Montreal Seafood Diner Signed Chuck Hughes

You have to make reservations 1 month in advance if you want to eat at this restaurant. You also need to be adventurous because this restaurant does not have a standing menu they a black board and have a weekly menu. You can find seafood wich I had when I went it was Jerk Snow crab, OMG it was amazing, they also have these insane seafood platter that most of the custumers where ordering with oyster, cocktail shrimp, crab just to name a few. I like a good caesar the drink and this one was a good one and they normely have a poultry option, beef and pork. The quality of the food and the service is amazing. A little pricy but it's worth it. We walked by it 3 times before we realized it was there.

He also recently launched a French cookbook and is a judge on the new competition cooking show Chopped. Hughes may be flying below the radar of late, but his restaurants are going gangbusters. His first, Garde Manger, remains one of the toughest reservations to garner in Montreal. His second, Le Bremner, is also busy yet has been running hot and cold since it opened in the summer of Reviews have been mixed, but after the first year in business, an up-and-coming chef from the brigade by the catchy name of Danny Smiles took over as head chef. Hughes remains executive chef and a partner at both restaurants.

It smells like ammonia, similar to old brie. The texture is soft like raw scallop, and the flavour is…not that bad. CB: What brings you to Taste of Toronto? CH: I came the first year [in ]. Not all food festivals are created equal, and this one is up there. The setting is fantastic — downtown, but [lots of grass and] no concrete.
